Tropical Cobbler {Gluten, Egg & Dairy Free}
3 T + 1 t. sugar, divided
1 T. cornstarch
1/2 t. ground cinnamon
3 c. fruit (I used Costco's Festival Blend [mango, papaya, pineapple, strawberry] and added a peach)
2 T. water
2 t. apple cider vinegar
2/3 c. rice flour
1/3 c. arrowroot powder
1/2 t. guar gum
1/3 c. fruit juice
1 T. applesauce
Heat oven to 400. In medium-sized saucepan, mix 2 tablespoons of sugar, the cornstarch and cinnamon. Stir in fruit, water and apple cider vinegar. Heat to boiling and boil for 1 minute, stirring constantly. Pour fruit mixture into ungreased 9x9 baking dish.
In medium bowl, combine the rice flour, arrowroot, guar gum, 1 tablespoon of sugar, milk and applesauce until soft dough forms. Drop by heaping tablespoonfuls onto fruit mixture. Sprinkle with remaining teaspoon of sugar and bake for 20-25 minutes, or until golden on top.
