{Muffins}
1 T. apple cider vinegar
1 c. milk
1 T. flax meal
3 T. hot water
1/2 c. applesauce
1 t. vanilla
3 T. sugar
1 1/2 c. rice flour
1/4 c. tapioca flour
1/2 c. cornstarch
2 t. guar gum
1 1/2 t. baking soda
1 t. baking powder
1 small apple, diced
{Topping}
1-2 T. melted butter
2 T. rice flour
1 T. cinnamon
3 T. sugar
Preheat oven to 350 and grease a muffin tin. Combine apple cider vinegar into the milk and let stand for about 5 minutes. In separate bowl, combine flax meal and hot water and set aside until gelled. Add in applesauce, vanilla and sugar. When well combined, stir in 'buttermilk.' In separate bowl, combine remaining dry muffin ingredients and apple. Stir into wet ingredients until well combined. In small bowl, melt butter in microwave. Stir in rice flour, cinnamon and sugar until crumbly. Sprinkle over muffins and bake for 20-25 minutes, or until firm to the touch.


That is so cute! I love it when kids redefine words for their own use. (I definitely did that a lot as a kid!)
